Umbria, a region that is characterized by the production of quality legumes and cereals, especially for those grown on the hills overlooking Lake Trasimeno.

Starting from raw materials and adding aromatic plants and extra virgin olive oil, we make our special traditional Italian soups.

Farro and chickpeas Soup

Ingredients:
Chickpeas, Spelt, Carrots, Celery, Onion, Tomato Purée, Extra Virgin Olive Oil, Ground Pepper, Rosemary, Salt.
Spelt:
Spelt is considered the oldest type of cultivated wheat. Introducing spelt to your diet can be an interesting variation to the cereal you consume. Spelt has a higher protein content than other types of wheat. It is a grain rich in vitamins and minerals, and low in fat.
Chickpeas:
Are a very ancient produce. We know that chickpeas were a food already in in existence in the Ancient Greek, Roman and Egyptian times. Chickpea are especially known for their protein content, and for their delicate flavour, that goes well with many dishes. Chickpeas are an excellent source of protein, of plant origin proteins. With vegetable proteins, one must remember that it is necessary to combine legumes, such as chickpeas, with grains, so that our body has all the required essential amino acids. Consuming Chickpeas is recommended especially to maintain healthy bones, because of it being rich in minerals; and also for lowering cholesterol, as chickpeas are a source of fibre.
Accompaniments:
Toast small pieces of bread and put them in soup, or toast a slice of bread and pour some soup, and eat it like a Tuscan ‘Crostino’, dribbling Botteghe D’Italia’s Olive Oil over it!

Unusual Soup

Ingredients:
Tomato, Onion, Chickpeas, Beans, Spelt, Barley, Carrots, Celery, Extra Virgin Olive Oil, Vegetable Broth, Pepper, Marjoram, Chilli.
Fagiolina:
A formidable food of the Etruscan Era. The only species of beans cultivated in Europe, before the advent of American varieties. Growing throughout Etruria, including in the Lake Trasimeno Basin, where the climate and damp soil make the ideal conditions for obtaining a product of excellent quality, which has remained unchanged over time, and cultivated right up to and after WWII, beans have been a major source of protein of the local population; in fact, analysis shows a protein content higher than other beans – from a 5% to 15+%.
Spelt:
Spelt is considered the oldest type of cultivated grain. Spelt has a higher protein content than other types of grain. It is a grain rich in vitamins and minerals but low in fat.
Barley:
Barley is a grain of ancient origin, and it is believed that the first grain consumed by man. Rich in mineral salts, it is anti-inflammatory, and perfect for those suffering from gastrointestinal problems; remineralizing, energizing, and of low glycemic index.
Accompaniments:

Cream of Fagiolina del Trasimeno

Ingredients:
Potatoes, Water, Beans 13%, Onions, Extra Virgin Olive Oil, Vegetable Broth, Salt and Pepper.
Fagiolina:
The most characteristic is the ingredient: Fagiolina: The only species of beans cultivated in Europe, before the advent of the American varieties. It grows throughout Etruria, including the Lake Trasimeno Basin, where the climate damp soil makes the ideal conditions to obtain a product of excellent quality, which has remained unchanged over time. Autumn Soup

Ingredients:
Spelt, Potato, Tomato Purée, Mushrooms 3% (Boletus Edules), Onion, Borletti Beans, Extra Virgin Olive Oil, Ground, Chilli Ground Pepper, Fresh Mint, Salt.
Porcini Mushrooms:
Porcini mushroom are considered among the more delicious varieties. Many recipes can be prepared with porcini mushrooms, in which they can be used fresh or dried. The Porcino is the best known edible fungi species.
