Aceto
A 100% natural product, made exclusively from short-bunch Tuscan Sangiovese grapes, from Chianti region vineyards. Grapes, healthy and free from flaws, that are harvested by hand, at just the right point of ripeness, to maintain their integrity and highlight the organoleptic characteristics and particular qualities of the grape; its aromas, its imprint, natural components, and its natural acids and sugars.
A slow winemaking process is used, paying special attention and care of the delicateness of the process, to preserve the aromas and flavours of the grapes. No antiseptics, additives or preservatives, of any kind, are used. Fermentation is constantly monitored and ‘induced’ naturally, with the aim of obtaining high-quality natural Vinegars.
The heart of the process is a slow acetic fermentation at a consistent temperature, performed using a superficial static method, which invokes ancient d’Orleans methods: time-consuming, continuous monitoring, and requiring a real ‘nanny’. In this way, the product doesn’t undergo stress, and its aromas and special flavours are enhanced.


Tuscan Red Vinegar
- Appearance:
- Bright red colour
- Nose:
- A pleasant fragrance. The initial aroma hints of black cherry, violets and plums, the three typical flavours of Tuscan Sangiovese and young Chianti wines.
- Taste:
- Aceto Toscano Rosso, is balanced, harmonious, rounded and does not bite.
- Ageing:
- Aged in barrels and casks following the ancient tradition.
- Accompaniments:
- Aceto Toscano Rosso pairs well with vegetables, salads and legumes.

Tuscan Rosato Vinegar
- Appearance:
- Pinkish colour
- Nose:
- Pleasant perfume. The initial aroma hints of black cherry, violets and plums, the three typical flavours of Tuscan Sangiovese and young Chianti wines.
- Taste:
- Balanced, harmonious, and doesn’t bite.
- Ageing:
- Aged in barrels and casks, with a similar method to Solera.
- Accompaniments:
- The Rosé is the strongest of the vinegars, ideal for lovers of bold flavours. Perfect on vegetables, salads and panzanella (a bread-based salad).

Cuore D’Uva Balsamic
- Appearance:
- Bright ruby red colour
- Nose:
- The initial aroma hints of black cherry, violets and plums, the three typical flavours of Tuscan Sangiovese and young Chianti wines.
- Taste:
- Good acidity with subtle balance
- Ageing:
- Barrel-aged.
- Accompaniments:
- Cuore D’Uva Balsamic has a very mineral taste, that goes well with raw vegetables and salads.

Dolce Cuore D’Uva Balsamic
- Appearance:
- Intense, bright colour, with golden yellow and amber tones. Fluid viscosity.
- Nose:
- Rich and complex bouquet. Aromatic content reminiscent of dried fruit, dates, and honey.
- Taste:
- Long lasting, perfect balance between sweetness and acidity, with velvety undertones.
- Ageing:
- A method similar to that of Solera, the final stage being in ‘Vinsanto’ kegs, for one year.

Cuore D’Uva Balsamico
- Appearance:
- Ruby Red tending towards garnet red, clear and bright.
- Nose:
- Complex ,with hints reminiscent of the characteristics of “Brunello”. The aroma is intense and persistent, with fruity yet also woody notes.
- Taste:
- Elegant and harmonious,with a long-lasting taste.
- Ageing:
- Aged in barrels and casks, with method similar to that of Solera.
- Accompaniments:
- Cuore D’Uva Balsamic is an ideal pairings with game, and grilled vegetables, meat or fish.
